On April 23–24, 2025, together with our French partner Soufflet Vigne, we took part in the Sparkling Wine Forum, the international event dedicated to the sparkling wine industry, held in the stunning setting of Reims, the beating heart of the Champagne region. Professionals, producers, oenologists, and industry operators came together to discuss market trends, technological innovations, sustainability, and strategies for enhancing sparkling wines on a global scale.
Following the success of our participation in 2024, the 2025 edition saw Dal Cin once again take part in shaping the enological conversation, with a presentation focused on innovation in the Traditional Method. The chosen topic, “Innovation in the Traditional Method: Activated Chitosan for Premium Sparkling Wines”, fully reflected our vision of a more efficient, natural, and wine-respectful future for enology.
Presentations by Samuele Lercari, Technical Support Manager of Dal Cin, and Marguerite Dols-Lafargue, Professor at ENSMAC – Bordeaux INP ,demonstrated the potential of KitoClear and BattKill XXL, new generation solutions for clarification and microbiological control. Both products, based on completely dissolved and activated chitosan, respectively make clarification faster and more effective, significantly reducing turbidity, and naturally block malolactic fermentation and contribute to greater chromatic stability.
This innovative approach optimizes winemaking processes, protects wine quality in the bottle, and reduces environmental impact—fully aligned with the principles of sustainable enology.
